We didn’t have a clue what we were in for the day our doctor told us “Your son has Celiac Disease.” While it answered the question of what was wrong with him, it created a thousand new questions that forever changed the way we looked at food.
We went home, took one look in the pantry and went from “OMG, there’s Gluten is in everything!” to “What the heck do we feed our child?!” We ate a lot of plain chicken & rice in those first weeks. We became ‘those gluten free weirdos’ who read every label, asked all the hard questions, and spent countless hours online doing all the research.
